Almond Butter Collagen Protein Bars

This is a grain free, dairy free, refined sugar free protein bar that can be a whole meal replacement. It is high in protein and fiber, low in net carbs, and will keep you feeling full.

Ingredients
  

  • 3/4 cup almond butter
  • 2 tbsp honey
  • 3 tbsp coconut oil
  • 1 tsp vanilla
  • 1/3 cup flax meal
  • 1/3 cup chopped nuts
  • 1/2 cup shredded coconut
  • 1/2 cup collagen powder
  • 1/4 cup hemp protein powder
  • 2 tbsp coconut flour
  • 1 tbsp chia seeds
  • 1 tsp cinnamon

Chocolate Topping

  • 2 tbsp coconut oil
  • 2 tbsp cocoa powder
  • 6 drops liquid stevia

Instructions
 

  • Mix coconut oil and honey in a microwave safe bowl. Microwave until coconut oil is melted.
  • Add almond butter to coconut oil and honey mixture. Stir until almond butter is incorporated.
  • Add vanilla.
  • In a separate bowl mix together all the dry ingredients including the cinnamon.
  • Pour almond butter mixture into the dry ingredients and mix until well coated.
  • Line a loaf pan with parchment paper and pour batter in. Press firmly into pan with the back of a spoon or your fingers.
  • Freeze for at least 30 minutes.
  • While bars are freezing, make the chocolate topping.
  • Remove bars from the freezer and pour chocolate on top.
  • Return to freezer for another 30 minutes and then cut into bars. Store in the fridge or freezer.

Chocolate Topping

  • Melt coconut oil in microwave safe bowl.
  • Add cocoa powder and mix until smooth.
  • Add stevia and mix.
