Almond Butter Collagen Protein Bars

There’s one thing I hate when it comes to eating healthy. Lack of convenience food.

Sure there are plenty of protein bars out there but most contain a bunch of junk that no one can pronounce.

I wanted a protein bar that I could feel good about eating and that had the right amount of protein, fat, and carbs to keep me feeling full. I love almond butter, coconut, and dark chocolate and played around until I figured out how to put them together with my favorite protein powders: collagen and hemp.

Hemp is a plant based complete protein and is loaded with fiber.

Collagen is the most abundant protein in the human body and consuming it from clean and ethical animal sources is a great way to boost the health of your skin, joints, muscles, and tendons.

These bars have so many great things in them and zero junk. They pass as a whole meal replacement if you eat a full serving or can be broken into smaller servings for a snack.

They curb my sweet craving every time without any guilt.

Almond Butter Collagen Protein Bars

This is a grain free, dairy free, refined sugar free protein bar that can be a whole meal replacement. It is high in protein and fiber, low in net carbs, and will keep you feeling full.

Ingredients
  

  • 3/4 cup almond butter
  • 2 tbsp honey
  • 3 tbsp coconut oil
  • 1 tsp vanilla
  • 1/3 cup flax meal
  • 1/3 cup chopped nuts
  • 1/2 cup shredded coconut
  • 1/2 cup collagen powder
  • 1/4 cup hemp protein powder
  • 2 tbsp coconut flour
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
Chocolate Topping
  • 2 tbsp coconut oil
  • 2 tbsp cocoa powder
  • 6 drops liquid stevia

Method
 

  1. Mix coconut oil and honey in a microwave safe bowl. Microwave until coconut oil is melted.
  2. Add almond butter to coconut oil and honey mixture. Stir until almond butter is incorporated.
  3. Add vanilla.
  4. In a separate bowl mix together all the dry ingredients including the cinnamon.
  5. Pour almond butter mixture into the dry ingredients and mix until well coated.
  6. Line a loaf pan with parchment paper and pour batter in. Press firmly into pan with the back of a spoon or your fingers.
  7. Freeze for at least 30 minutes.
  8. While bars are freezing, make the chocolate topping.
  9. Remove bars from the freezer and pour chocolate on top.
  10. Return to freezer for another 30 minutes and then cut into bars. Store in the fridge or freezer.
Chocolate Topping
  1. Melt coconut oil in microwave safe bowl.
  2. Add cocoa powder and mix until smooth.
  3. Add stevia and mix.
